A fun and inexpensive alternative to an upscale dining experience for his fellow Aggies and Locals, Chef Tai has developed a menu that delivers gourmet food at street level prices. Madden's Casual Gourmet brings New American Cuisine with Southwestern influence originally created by Chef Peter Madden (since 2004), and currently owned and managed by Chef Tai (since 2016). Not only it was featured as 'The Best Things We Ate in 2018' by Texas Monthly, Madden's Casual Gourmet has enjoyed great success and recognition for providing excellent food and service in Downtown Bryan. Paolo's Italian Kitchen (since 2014): Wanting to bring the flavors of New York and Southern Italy to College Station, Chef Tai partnered with Paul and Jeanne Karl who owned his favorite Italian restaurant in New York for 30+ years until they moved to College Station. It is an unique New York/Italian culinary destination in BCS that everyone must try! Urban Table i s Chef Tai's newest restaurant concept in South of College Station (since 2019). This New American Kitchen serves the best version of dishes we've seen from coast to coast. Urban Table combines a family friendly downstairs area with a social atmosphere and bar upstairs. Veritas Wine and Bistro (since 2007): Chef Tai has created a modern French-American-Asian bistro with a menu reflecting the changing seasons and focus on the simplicity of fine ingredients.
