We support local food producers and source all of our ingredients carefully, with an unwavering commitment to choosing foods that are cultivated safely, justly and sustainably. We meticulously research our sources to ensure we know where our food comes from and how it is raised. We make certain that the farmers and their workers who bring us the gifts of each harvest are fairly compensated. We go beyond organic. Focusing on the sweet spot of each season, we utilize fruits and vegetables at their peak. Our menu is 50% vegetarian (with many vegan options) and 50% meat and fish. We create the highest quality house-cured charcuterie, mouth-watering crudo (raw) creations, and innovative artisanal cuisine drawing on old-world culinary techniques.
