LAFFORT offers a full range of selected yeast for all wine grape varietals and styles. Among our Z YMAFLORE ® strains, we offer a selection of varietal cross bred and terroir selected strains, the newest of which is the Z YMAFLORE ® DELTA , a Saccharomyces cerevisiae strain for aromatic white wine fermentation. LAFFORT´s ZYMAFLORE® DELTA particularly develops the varietal aroma expression of grapefruit and passion fruit. It also enhances the structure of the wine by building up a great mouthfeel. ZYMAFLORE® DELTA is recommended for white wines showing complexity, freshness and elegance such as Sauvignon Blanc, Semillon, Riesling and Verdejo. LAFFORT´s ZYMAFLORE® RB2 enhances Pinot Noir character including kirsch cherry notes. Its unique cell surface properties include very low anthocyanin (color) adsorption which leaves more of your valuable color in the wine and not bound in the lees. Isolated from a premium estate in Burgundy, ZYMAFLORE® RB2 has the lineage of greatness in Pinot Noir production. LAFFORT´s Zymaflore® RX60 offers outstanding fermentation abilities with excellent varietal aroma expression even in difficult conditions. ZYMAFLORE® RX60 is recommended for wines like Syrah, Zinfandel and Merlot. High aroma production of fresh currant and berry notes along with very low H2S production leads to fruity, spicy wines with balance and structure.
