Mottra produces Osetra (Acipenser baerii) and Sterlet (Acipenser ruthenus) caviar all year long, no matter what the season, due to the Mottra caviar pools being totally enclosed and insulated under carefully controlled temperatures using unique technology. This allows Mottra to be in full control of the process of caviar ripeness as the water at the farm is not susceptible to climate change and the caviar can be collected when it is at its best. Mottra does not use any preservatives, chemical or medical additions to the fish nor to the caviar; only salt is added. The caviar is malossol, grain-to-grain. Unlike many farms, the Mottra sturgeon are "stripped" of their eggs and are allowed to mature rather than being culled, as for each year that the fish lives the superior the quality, and thus all round caviar experience. The exceptional quality of MOTTRA black caviar is due to its ecological and precisely controlled approach to farming. MOTTRA takes the purest artesian water from 150 meters beneath the ground and then purifies it even further through a sophisticated cleaning process of double filtration - a far cry from the polluted rivers and seas across the world where the majority of the world&s;s caviar comes from. Not only is MOTTRA concerned about the quality of the cleansed water in which their fish swim, they also thoroughly manage the feeds, only buying from reliable producers that have the best quality, and are ecologically friendly.
