Souvla
Souvla is a fine-casual Greek sandwich shop and wine bar located in the heart of San Francisco's Hayes Valley, inspired by the casual neighborhood souvlaki joints found throughout Greece. (The word "souvla" means "spit" or "skewer" in Greek - the rod on which meat is roasted.) The first Souvla opened its doors in April, 2014 at 517 Hayes Street. The restaurant, known for its hip, energetic ambiance, friendly, engaging service and unique, healthful Hellenic offerings, pioneered the "fine casual" niche of the fast casual movement, blending many of the approaches, touch points and aesthetics of a full-service restaurant with the operating efficiency a fast casual establishment. Souvla was an instant hit with locals, industry insiders and tourists alike. Almost immediately, Souvla developed a cult-like following and soon found its way onto local "best-of" lists and national publications like The New York Times and Bon Appétit magazine. Souvla's approach to the gyro sandwich was also named the #1 Food Trend of 2015 by Bon Appétit magazine, and was featured on The Today Show.
