We pride ourselves on securing as much locally produced ingredients as possible, with one particularly significant meat product, supplied by Brian Thomas (shown above) of Anglesey, whose farm is just 34 miles away. The reasoning behind the exceptional meat product is explained in Brian's own words and why he is so proud of his contribution towards the culinary reputation of the North Wales. "We are justifiably proud of our award winning Black Beef. There are a number of factors that we believe, combine together, that produce our superb beef. Our system of farming the cattle on extensive grazing on the clover-rich Anglesey pastures, results in the beef having more flavour. We hang our beef for 3 weeks to enhance tenderisation and add more flavour.
