Established in 2000. Contemporary Tasmanian Cuisine Specialty food and Tasmanian art, craft and giftware for sale in shop above restaurant. Stillwater opened it&s;s doors in October 2000 after a sensitive adaptation of the 1830&s;s flour mill it is housed in. Aged timber floors and beams of the Mill give this modern restaurant warmth and a connection to place knowing much of the building material came from other parts of the globe to establish the new enterprise in the 19th century. Since opening it&s;s doors Stillwater has received many awards for not only the restaurant experience but the wine list and the business itself. Developed to showcase Tasmanian produce and wine Stillwater operates as a more casual cafe by day and indulgent dining experience at night with a focus on Tasmanian contemporary cuisine make this a cornerstone of Tasmanian hospitality offerings.
