We continue to promote resource conservation by developing and implementing control systems in the kitchen to ensure that energy - whether gas or electricity - is not wasted. These control systems encompass controlling the amount of energy used during and after food is delivered in storage, preparation and presentation. We promote waste minimisation and waste recycling by developing and implementing the necessary systems, working alongside the cleaning contractor, to deal effectively with all kitchen waste. We work alongside our local and national suppliers in minimizing packaging, where necessary, particularly the use of plastic, encouraging instead, the use of bio-degradable materials. Whilst our official procedures for auditing all aspects of our suppliers' working practices are extensive, we do not currently look at their use of packaging. We would, however, be prepared to work with our clients to develop a new section within our audit form to address this area.
